Wellbody Recipe: Grilled Veggies Galore

Grilled CornWhat's not to like about grilled vegetables?

Smoky, caramelized and pungent, grilled vegetables retain many of the nutrients lost to techniques such as simmering; glowing embers intensify vegetables' complex flavors without the need for excessive fats; grilled veggies don't carry the risk of cancer inherent in grilled meats. Plus, no dirty pots and pans to wash!

To avoid ingesting leftover carcinogens, take an extra minute to scrape any greasy meat detritus from previous cooking sessions before you put vegetables on the grill.

Experiment. Grilling brings out a smoky sweetness in broccoli, beans and whole cherry tomatoes. Tendrils of smoke and flame give everyday button mushrooms an extraordinary, earthy meatiness. Do you have a favorite grilled vegetable recipe? Share with us at professorwellbody@pacsci.org.
